Description:

ESSENTIAL FUNCTIONS:

· Supervises and schedules Food Service Workers in all areas of Dietary Services. Maintains productivity within budgetary limits. Completes Kronos timely and accurately.

· Interviews, trains, observes performance, analyzes, evaluates, and counsels staff to be in compliance.

· Plans menus, determines pricing, controls labor and food costs and keeps records of meals served, cash receipts, and other pertinent data for retail services.

· Requisitions foods and supplies; calculates amounts of foods to prepare. Responsible to maintain expenses within budgetary limits.

· Trains cashiers in operation of cash register; inputs menu and pricing daily; records data from tapes; counts money and secures for deposit. Responsible for accurate cash handling procedures for Dietary Services.

· Inspects equipment and department for safety, code compliance, sanitation and operation; reports compliance issues or malfunctions to Director and Maintenance. Documents issues and resolutions.

· Coordinates and maintains temp logs as appropriate on equipment, production and patient foods. Documents findings, files in organized manner. Documents issues out of compliance and resolution.

· Participates in educational and management meetings. Plans and conducts staff meetings to instruct/develop, communicate, listen, inform and respond to concerns. Coordinates and

holds monthly staff meetings.

· Participates in Six Sigma by scooping a project or being an active team member.

· Completes progress and performance appraisals annually. Completes initial departmental orientation. Completes department/job specific competencies updating as required by regulatory and accrediting agencies.

· Responsible to ensure staff receives departmental educational activities.

· Responsible for completing supply requisitions, special function requisitions, signing packing slips, and galley usage. Tracks utilization statistics of departmental activities and maintains documentation.

· Responsible for creation and maintaining recipe and files, HAACP compliant. Ensures recipes are current and followed by production.

· Maintains updated staff training and manuals; MSDS, Emergency Management Plans, departmental and corporate policies and procedures.

· Assists department director and other supervisors as requested.

· Fills in at staff position or other Lead/Supervisory positions as needed and/or requested.

MINIMUM KNOWLEDGE, SKILLS AND ABILITIES REQUIRED:

· Bachelor degree in related field preferred.

· Membership in the Dietary Managers Association desirable.

· Five years experience in large-scale food service operation required.

· Equivalent combination of training or experience may be accepted.

· Proof of completion of Mandatory Reporter abuse training for child and dependent adult abuse within three (3) months of hire.
